Ingredients
Grated Coconut - 4 to 5 Tsp Rice - 1/2 cup Salt To Temper: Coconut Oil - 1 tsp Cooking oil- 2 tsp Peanuts - 3 tsp Green chillies - 2 Mustard - 1 tsp Channa Dal - 1/2 tsp Urad Dal - 1/2 tsp Fried Gram - 1 tsp (optional) Curry Leaves - few Flavoring: Ghee - 1tsp Cashew - few
Cooking Instructions
*Cook Rice and Allow it to cool. Make sure that the grains are not sticky *Heat coconut and cooking oil in a pan, and throw in mustard seeds and allow it to splutter *Add channa dal, Urad dal and saute for a second. *Add green chillies, curry leaves, Peanuts and fried grams. *Transfer this to a bowl. *In the same pan, fry the scrapped coconut till it turns golden in color. *Once this is done, add the fried coconut and the spices to the rice and mix well. *Add required salt to taste and mix well.
For Flavoring: Fry cashew in the ghee and add on top of the Coconut Rice.
Serve with roasted papad or potato curry.
